West Inidan Black rum cake or Caribbean rum cake is a delicacy in the Caribbean. Every kid’s mom has produced a Pineapple Upside Down or two, usually opting for a recipe on the side of a can of Dole’s, or perhaps referring to an old family recipe for guidance. But this is not your mom’s upside down cake. With an overabundance of fresh mangoes in our Barbados “garden” as the English refer to a yard, not to mention an equally ample stock of aged rum in the cupboard, it only seems natural to put the two together in a fun and festive way. This recipe serves 8 to 10 depending on how you slice it. more
A Class Reunion

A class reunion is suppose to be about reconnecting with old friends and classmates that you haven’t seen in ages but often wondered about. It’s a time to fellowship and share life lessons, exchange family photos, express one’s joy of just living to be able to attend your class reunion. We all know someone who was unfortunate and did not live to see their class reunion. I know first hand…my sister Donna Bradford did not live to make it to her class reunion last year. Now is the time to rejoice and thank the Lord for allowing us to live in this moment. It is a time for reflection, going back to our high school days before we received our degrees, jobs, homes, made money or put ourselves in a “status” group. The only thing we had back then were our friends and family to get us through the peer pressures of life as it was. What happen to the innocence of just being true to who you were as a person and being kind and respectful to one another because that was what we were taught. We were all BROKE…living off of our parents but we still had FUN. more
